Shorty Tang and Sons: Sesame and Dan Dan Noodles
Our inaugural Little Eats 小吃 vendor-in-residence! We kicked off our "substantial snack" bar in Pearl River Mart Foods with this small AAPI family-owned business based in New Jersey.
An immigrant from Taiwan, Shorty Tang was a master chef in his birth country. In 1971, he opened his own restaurant in Manhattan's Chinatown, where he first served his iconic cold sesame noodles. Shorty's grandson Gilley founded Shorty Tang and Sons as a way to revive and pay homage to his grandfather's noodle recipes.
On the menu of their Little Eats 小吃 pop-up were sesame and dan dan noodles, both of which included Shorty Tang's signature sesame-chili vinegar oil.
