Yun Hai's Taiwanese fruit preserves are just that — Taiwanese fruit and not much else. Extremely fresh, they're closer to a fruit sauce than to jam or jelly. They feature large chunks of fruit, are lower in sugar than conventional versions, and are prepared in micro-batches to ensure the gentlest of processing.

Yun Hai works with jam makers in Taipei, who make these by hand in small quantities to preserve the nuances and aroma of the fresh fruit.

Irwin Mangoes are the mango variety of choice in Taiwan, as featured in the namesake dessert, Mango Shaved Ice 芒果冰. This Irwin Mango Jam is one of the next best things to eating the fresh version of the fruit. Made with fresh Irwin mangoes, lemon juice, and sugar, this jam exudes a pure, pronounced mango sweetness, as well as the pulpy texture of the fruit itself.

The mangoes are sourced from Pingtung, a coastal county in southern Taiwan. The area’s marine biome imparts a more complex flavor to the mangoes grown there — and the terroir is reflected in the jam.

Tasting notes and usage

  • Sweet, juicy mango that will remind you of sinking your teeth into a fresh Irwin mango at a market in Taiwan
  • Yun Hai's jams are not as sweet as conventional jams in the U.S. so don't be shy with the amount you use, especially when mixing into yogurt or drizzling on ice cream
  • Layer it on top of a panna cotta, stir it into oatmeal, glaze a vanilla pound cake, or spread it over fluffy milk toast. Try it in savory applications, too, such as shrimp.
