Brown Butter Bessou Furikake Chex Mix

Ingredients
- 7 cups Corn Chex cereal
- 4 cups popped popcorn
- 2 cups baked green pea snacks
- 1 cup mini rice crackers
- 1 cup unsalted peanuts
- ½ cup unsalted butter
- ½ cup maple syrup
- 2 tsp soy sauce
- 1 tsp vanilla extract
- ½ tsp salt
- ½ cup Bessou furikake
Recipe
- Preheat the oven to 250°F.
- In a large bowl, toss the chex, popcorn, snacks and peanuts together.
- Melt the butter in a small saucepan over medium-high heat until it starts to brown slightly. Turn down the heat to medium and stir in the syrup, soy sauce, vanilla, and salt.
- Gradually drizzle the butter mixture into the snack mix in increments, stirring well to evenly coat the snacks. Toss in the Bessou furikake.
- Spread in a thin layer on 2 or 3 large baking sheets and bake for 1 hour, tossing the mixture every 20 minutes, and swapping the racks for even toasting.
- Let cool completely before storing it in an airtight container.
