Dan Dan Dumplings
Dan dan dumpling time! Our latest recipe features mushroom dumplings made with Chinese Laundry's dan dan sauce.
Chinese Laundry was founded by designer Yanza and chef Leo, a husband-and-wife team in California, as a way to preserve and share Yanza's family recipes from China.
Their spicy and nutty dan dan sauce adds some extra oomph to these dumplings. Check out the recipe:
Ingredients (makes 18)
- 6 dried Chinese mushrooms, soaked overnight in plenty of water, strained and finely chopped
- 1 carrot, peeled and finely chopped
- 2 cabbage leaves, finely chopped
- 2 tsp neutral oil
- 1” stem fresh ginger, peeled and minced
- 3 Tbsp Chinese Laundry Dan Dan Sauce, plus more for serving
- 1 tsp salt
- Dumpling wrappers
- Scallions and cilantro to serve
Recipe
- Add oil to a hot wok, stir-fry the ginger for 1 minute.
- Add the chopped vegetables and stir-fry for 2 to 3 minutes until the carrot has softened.
- Mix in the Chinese Laundry Dan Dan sauce and season with salt.
- Set aside to cool completely.
- Wrap the dumplings and steam for 8 minutes.
- Serve hot!
