Tung Ting Oolong Tea

Also called dong ding, tung ting oolong tea comes from Taiwan. Translated as "icy peak," tung ting refers to the name of the mountain where the tea is cultivated. The plants are originally from the Wuyi Mountains in Fujian province, China, and were brought to Taiwan about 150 years ago. Da Hong Pao Oolong Tea

Translated as "big red robe," da hong pao is an oolong tea grown in the Wuyi Mountains of Fujian province, China. Brewing the rope-like leaves results in a bright and clear orange-yellow. It can retain its flavor for nine steepings.

Why big red robe?

Legend says that in 1385, a scholar on his way to his imperial exam fell ill and was nursed back to health by a monk with a healing tea. The scholar recovered, passed his exam, and was rewarded with a red robe reserved for imperial scholars. 

Afterward he returned to the monk to thank him and ask about the tea. The monk showed him the tea bush. The scholar took the bush (we hope the monk had others!), wrapped it carefully with his new red robe, and brought it home.

Lapsang Souchong Black Tea

Also known as smoked tea, lapsang souchong is one of the oldest black teas in the world. Grown in the Wuyi Mountains of Fujian province, China, the tea is still prepared using manual techniques that have been passed down across generations.

The smoky flavor is achieved through a unique process. First, the leaves are dried over cypress or pine wood fires. Then they're placed in barrels to intensify the smoky aroma.

Finally, the leaves are moved into flat wicker baskets, which are placed on bamboo trays over a pine wood fire. There the leaves dry even further and soak up even more aroma. The result are thick black leaves that produce a distinctive smoky taste.
